Szechuan Pepper
Szechuan pepper has a unique flavour and amazing aroma's. It has citrus notes, a slight lavender under tone and a light pepper flavour. Szechuan has a unique numbing sensation, the more you use the greater the numbing sensation.
Szechuan is regularly used in Asian cooking. It's great in sauces, soups, stews, on chicken, braised meats and infused in oil.
History
This little pepper has quite a history in medicine, it was known as the toothache tree as the bark and the shell of the berry have numbing qualities. It was said to help with blood purification, digestion and wound healing. It also contains unique essential oils, terpenes create its unique pungent aromatic flavours.
